Description
This dish from northwest Cameroon is a mixture of vegetables: okok and water leaf, a kind of small leaf spinach. It is not always easy to find all these ingredients, especially when you live outside the country: you can replace water leaf with branch spinach. So here is the recipe for 6 people, the average size of a household in Cameroon.
Ingredients:
1 bag of eru leaves or 3 cups of eru (or okok) leaves;
750 g spinach leaves or 3 cups water leaf leaves;
1 cup mandjanga or crayfish;
Smoked fish (skewers or bifagas or cod);
Beef skin;
1 kg of beef meat;
1/4 litre of palm oil;
Salt;
Pepper (optional);
200 ml water: use the juice from the meat and fish preferably.
